Osborne Sibarita Oloroso VORS

Rich and intense, with dried fruit, leather, caramel and coffee, and yet a distinct balancing volatile freshness - a rich yet fresh wine that both matches and contrasts the richest red meat and game dishes.

The name Sibarita comes from the word 'Sybarite' - one who enjoys the pleasures of good foood and wine. This Oloroso was drawn from a solera established in 1792 consisting of 4 criaderas.

While today this wine is sold as an Oloroso, sherry from the Sibarita solera has been called Amontillado and Palo Cortado at various points over the last century. These designations are not as cut and dry as they may seem, as they are ultimately based on the flavour of the wine, rather than necessarily the production process. As such, rather than starting with a dry Palamino Fino wine that is immediately fortified for oxidative ageing, this Oloroso in fact underwent a period of biological ageing in solera, before later ageing oxidatively for a much longer period. The designation of Oloroso is justified here by the fact that that the fresh herbaceous qualities imparted by ageing under flor have been eclipsed by the rich, deep oxidative characteristics.

Official Tasting Notes

Appearance – an intense, bright topaz colour, with very beautiful reddish reflections.

Nose – mature aromas of nuts, such as walnuts, with profound and interesting touches of spice and oak.

Palate – rounded, it fills the mouth and is both smooth and well balanced, with a long, persistent finish.
