Raats Dolomite Cabernet Franc 2019

Great freshness, acidity and minerality - A great wine to go with some nicely charred grilled meat.

A wonderful embodiment of the dolomite granite soils of Stellenbosch from winemaker, Bruwer Raats who has earned a reputation as the most exciting and forward thinking winemaker in Stellenbosch.

This is a blend of 90% Cabernet Franc and 10% Malbec grown on decomposed dolomite granite soils. The grapes are hand picked and rigorously hand sorted before being pressed as whole bunches and cold macerated for 5 days on skins. The juice is fermented by natural yeasts in stainless steel tanks at 28°C, followed by a period of malolactic fermentation. The wine is aged in 300L old French oak casks before bottling without fining or filtration.

Pork Loin with Plum and Armagnac sauce, Beef Fillet, Hard Cheeses.

Official Tasting Notes
Dolomite wines express great purity of fruit and balanced elegance. The nose shows dark and red cherry. Dark berries, spiciness and herbs linger on the palate. The wine has great purity of fruit with a hint of wet-stone minerality and a velvet soft finish.
