Domaine de Rimauresq is one of the top producers in the Côtes de Provence, having held Cru Classé status since 1955. The domaine boasts 57 hectares of quality vineyards dating as far back as 1930, with an average age of 40 years. As of 2020, the estate is fully certified as organic.

The Rimauresq estate vineyards lie in the foothills of the Maures Massif, at 140-190m above sea level, sheltered from the Mediterranean sun by the Notre Dame des Anges mountain and cooled by northwesterly mistral winds. This uniquely cool microclimate allows for slower sugar-ripening, and more complete phenolic ripening of the grapes. The estates vines sit in three different soil types - schist, pink sandstone and Galets roulés ('rolled pebbles' consisting mainly of quartzite).

This wine is a blend of varieties from across the estate, predominantly Grenache (46%) and Cinsault (27%), with the balance made up by smaller proportions of Rolle (AKA Vermentino), Syrah, Mourvèdre, Tibouren and Carignan. The fruit is harvested, both mechanically and by hand, in the cool early morning. The grapes are cold-macerated for several hours, extracting phenols and minimal colour from the skins, before pressing. The juice is fermented and the resultant wine is aged for three weeks on lees with regular battonage to impart texture and a slight autolytic character.
