Saint Mars Of The Desert Rising Slowly Koelship IPA

Sheffield-based artisanal brewers Saint Mars of the Desert combine traditional and modern brewing techniques to produce truly exceptional beers that are at once rustic and contemporary.

Rising Slowly is a great example of this. After the boil, the wort was transferred to a koelship to which hops have been added. The wort rests at 80°C for a short period of time to extract desirable flavour compounds from the hops, before it is transferred to the fermentation vessel via a modern heat exchanger which quickly cools the wort to an appropriate fermentation temperature.

The result is a punchy, fruity and beautifully well-balanced IPA.
