Saraja can best be thought of as a winemaking Supergroup, consisting of 5 highly experienced and respected winemakers. A relatively new operation, their wines are currently vinified and bottled 10km inland in Calangianus, while their own winery is under construction on the coast of Olbia, Northeast Sardinia, and is expected to be operational by the end of 2023. Their fruit is predominantly drawn from 49 hectares of their own vineyards in the finest sites across all of Sardinia, with the exception of their Carignano grapes which are bought in from top growers in Sulcis. Ultimately, Saraja as a project is an expression of love for the landscape of Sardinia and this passion can be tasted in their wines.

This wine is 100% Cannonau (the local name for Grenache) grown in Saraja's vineyards in Oligastra, by the eastern coast, and Romagnia in the far northwest of Sardinia, by the coast of the Gulf of Asinaria. In each case, the vineyards sit at an altitude of 90m above sea level and have an overall average age of 20 years.

The fruit is harvested by hand and destemmed before a 14-day period of maceration with regular pumping over and 'rack and return' which softens the acidity of the must. The must is then clarified by gravity sedimentation at a low temperature, before fermenting the clarified juice in stainless steel tanks at 22-28°C, followed by full malolactic fermentation. The wine is aged for 2 months in stainless steel on fine lees, with battonage, then for a further 4 months without battonage to stabilise and clarify the wine before bottling. The bottled wine is cellared for 2 months prior to release.
