Official Tasting Notes by Harry Wood, Drinishader, Isle of Harris “On the nose there’s an earthiness reminding me of walking in Aline Forest here in Harris, and green ‘ribes’ from wandering further afield on Worthing Downs. I get the smell of machair flowers and shell sand, then saffron buns, fresh from the bakery. There’s vanilla too, like Brighton Pier ice-cream. With a splash of water, the spices open up, giving cloves and nutmeg from my stepdad’s cooking cabinet. More fruit notes expand - foam bananas and pineapple cubes from childhood sweet shops. And, buttercream icing from my mum’s homebaking. On the palate there’s cereal, a green start with waves of fruit and spice notes, with a leathery, smoky and liquoricey finish.”
