Thompson Bros 8 Year Old SRV5 Blended Malt

A waxy, fruity Scottish Blended Malt with a balanced level of smoke from the Thompson Bros in Dornoch. To create this dram, they combine single malts they have chosen in a 1200 litre European oak vat toasted to their specifications.

When bottling a batch, they take a maximum of two-thirds of the spirit, leaving the base within the vat as the starter for the next batch.

They selected 48.5% as their bottling strenght as when they were slowly adding water, this strength showed the best flavour.

Official Tasting Notes

Nose – Galia melon, lemongrass, apricot, cucumber, waxed lemons, green peppercorns & capers in brine, green apples, lime cordial, grapefruit bitters, green peppers, coastal peat & beach bonfires

Palate – Greengage, cantaloupe melon, banana smoothie, lemon oil, grapefruit juice, capers, lemongrass, thyme, 1st press olive oil, candlewax and gentle smoke

Finish – Lemon balm, thyme, camphor, earthy peat & gentle smoke. Long with a coating of waxiness
