Valdespino Fino Inocente Pago de Macharnudo

Bone-dry, herbaceous and slightly doughy, with a hint of salinity - A superb as an aperitif or to accompany lemon-drizzled asparagus.

The Palamino for this single-vineyard Fino was grown on the white albariza soils of Pago Macharnudo, rich in gypsum, silica and clay. This soil is ideal for retaining water during the blisteringly hot Jerez summers. This, along with it's south-eastern aspect, high altitude and moderate incline makes this vineyard one of the finest sites in Jerez.

Once harvested, the grapes are gently pressed and the must fermented in 600L american oak barrels. Once fermented to dryness, the wine is fortified to 15% and introduced to the top criadera of the solera system, where it begins to age biologically, under a layer of yeast (flor) which prevents oxidation of the wine. The Inocente Fino solera consists of 10 criaderas, notably more than most other producers, and the wine is fractionally blended though this system, ultimately resulting in a highly complex Fino with an average age of 10 years.

Official Tasting Notes
Straw yellow in colour. Savoury aromas bread dough, almonds, olives and dried apples dominate on the nose. Bone dry and bracingly refreshing on the palate, with a saline minerality and a long and complex finish.
