This isn’t necessarily a wine you want to sip with your Christmas turkey, not because it wouldn’t be perfect, simply because it’s a wine which gently commands your attention, and envelops your senses: This is a wine for contemplation, and a wine to share.

Pancho Lavaque of Vallisto winery is focussed on the production of delicate, aromatic, elegant wines in a region better known for intense brooding beasts.

Their Bayala Lavaque is made from the hand harvested Criolla Chica from vines planted in the late 19th century at 1900 meters above sea level in the Calchaqui Valley, vinified with native yeasts, and aged for two winters in French oak before bottling without filtration or additions, this is a delicate, energetic joy which speaks volumes of the vinous heritage Argentina.
